The white

Treixadura, 2024

Where
Vilanova dos Infantes, Ourense. Three hundred people, one bakery, and the vines start where the houses end.
Who
Amparo. A hectare and a half on the slope behind the church, and her third harvest on her own.
Open it with
Cold, with the tin, before anyone sits down. It travels badly, so it comes in wood.
When someone asks
A white from Ribeiro, treixadura, kept in old wood. That's the whole answer.

The red

Garnacha, 2022

Where
Cebreros, Ávila. Vines at nine hundred metres, planted in the fifties, on sand and granite.
Who
Bruno. Four plots that don't touch each other, and a winery he rents by the month.
Open it with
Open the red on a Tuesday. It's better than it looks. Give it an hour, or pour it into a jug.
When someone asks
Garnacha from Cebreros, old vines, high and cold. Picked in October.

Three things from the pantry.

  • Sheep's cheese, six months

    From a dairy two valleys over. Cut it thin and eat it with the white, before the red comes out.

  • Mussels in escabeche, sixteen to the tin

    Open them first, with the white. Keep the sauce for the bread.

  • Stone-ground flour, one kilo

    From the mill at the bottom of the village. It makes a slow bread, and that bread goes with the red.

Who chose this box.

The same cellar, the same week of every month. Whoever is in it tastes what the growers bring, picks the two bottles, then finds the three things that sit beside them.
